Mediterranean Roasted Tomato Salmon

This is one of my favorite ways to serve salmon because everything cooks together in one pan. The tomatoes blister and release their juices around the fish, creating a bright, simple sauce with lemon, garlic and herbs.

The recipe

Ingredients

Method

  1. 1

    Heat the oven to 425°F.

  2. 2

Place the cherry tomatoes in a large baking dish. Toss with 2 tablespoons olive oil, garlic, oregano, paprika, salt and pepper.

  3. 3

Roast the tomatoes for 10 minutes, until they begin to blister.

  4. 4

Pat the salmon dry and season with salt and pepper.

  5. 5

Nestle the salmon among the tomatoes. Top with the lemon slices and drizzle with the remaining olive oil.

  6. 6

Roast for 10–12 minutes more, depending on the thickness of the salmon, until it is just cooked through.

  7. 7

Squeeze fresh lemon juice over the pan and finish with parsley or basil.

  8. 8

Spoon the warm tomato juices over each salmon fillet before serving.

Notes

For the juiciest salmon, take it out of the oven as soon as the center is opaque and flakes easily.
