Pan con tomate is one of the simplest things you can put on the table, and that is exactly why the ingredients matter so much. Crisp bread, very ripe tomatoes, garlic and good olive oil are all you need for a beautiful appetizer or afternoon snack.
The recipe
Ingredients
Method
-
1
Slice the bread into thick pieces and toast or grill until crisp and golden at the edges.
-
2
Cut the tomatoes in half and grate the cut sides on the large holes of a box grater into a bowl, discarding the skins.
-
3
Season the grated tomato with a pinch of salt and 1 tablespoon olive oil.
-
4
While the bread is still warm, lightly rub one side of each slice with the cut garlic clove.
-
5
Spoon the grated tomato generously over the toast.
-
6
Finish with the remaining olive oil, flaky salt and a little black pepper if you like.
-
7
Serve immediately while the bread is still crisp.
Notes
For a more rustic version, skip grating the tomato and rub a halved ripe tomato directly over the warm toast.
