I love serving tzatziki with warm roasted potatoes because the contrast is so good: cool, creamy yogurt and cucumber against hot, crisp potatoes. It is casual enough for a snack but pretty enough to put out when friends come over.

For the Roasted Potatoes
Method
-
1
Heat the oven to 425°F.

Toss the potatoes with olive oil, oregano, garlic powder, salt and pepper.
-
3
Arrange cut-side down on a baking sheet and roast for 25–30 minutes, turning once, until deeply golden and tender.

While the potatoes roast, squeeze as much moisture as possible from the grated cucumber using a clean kitchen towel.
-
5
Mix the cucumber with the yogurt, garlic, lemon juice, olive oil, dill, mint, salt and pepper.
-
6
Chill the tzatziki until the potatoes are ready.

Serve the hot roasted potatoes with the cool tzatziki and lemon wedges.
Notes
For the crispest potatoes, place them cut-side down and leave a little space between each one.
